I suspect this thread will descend into a pit of despair fairly quickly, but I have been reading the TRC Rollcall thread and I must admit I am a little disappointed in the general undertone of some of the replies... DodgetheRog has obviously spent a lot of time putting together those words and when he read it out at the Memorial Meet, he was met with acknowledging nods, smiles, titters and a round of applause at the end. He has captures a lot of what the spirit of TRC is all

1 Kilo Brown onions
2-3 Red onions
10-12 Black peppercorns, crushed
Peel and chop up onions as roughly as you like
Chop chilli up finely removing all seeds.
Sauté the onions and chilli in a bit of olive oil and butter, and I mean slowly, I tend to cover the pan with a lid and put it on a very low heat, stirring every few minutes and ensuring that none of it catches on the bottom
150g long fresh red chillies, each deseeded and cut into about 4 pieces.
150g red peppers, cored, deseeded and cut into rough chunks
1kg jam sugar
600ml cider vinegar
6 x 250ml sealable jars, with vinegar-proof lid, such as Kilner jar or re-usable pickle jar
Serving Size : Makes approx. 1.5 Litres
1. Sterilize your jars and leave to cool.
2. Put the cut-up chillies into a food processor and pulse
