McSatan's Masala

Blimey, thats sounds frighning!!!

McSatan posted his recipe for a masala to make curry house style curries, looks good, hope he doesnt mind me posting it here.

If you fancy making an Indian restaurant style curry, try this. Now I rarely measure anything precisely, so you just have to use your own judgement.

A big bag of onions, peeled and roughly chopped.
Boil them in some water until they're soft.
Pour off most of the water (keep some) and puree with a blender, add some of the reserved water if needed, you're aiming for a tomato puree type consistency.

Spices. Turmeric, coriander, cumin, garam masala, chilli powder, cardamoms, cloves, couple of tbsp of each, or whatever spices you fancy, mix with a little water to a paste.

In a pan, heat a couple of tbsp of oil, and fry a good big scoosh (about half a dozen tbsp?) of tomato puree for about 30 seconds,
do the same with the same amount of either fresh finely chopped ginger or puree, and finely chopped chilis, seeded if you're a girl.

Tip in some more oil, and add the onion puree and fry for about ten mins, then pour in a can of chopped tomatoes, and simmer for about 30 mins until you get the proper texture, add a bit of salt as well, sugar if you need it.

That's yer basic masala gravy, now you can add whatever you want to make your individual dishes, bit of cream, more fried spices, then add cooked meat or vegetables, job done. It's easy to freeze the gravy in containers, and just take out as much as you need.

    Just made a minor variation of this and it is bloomin' gorgeous.

    I may have to knock some heat out of it tomorrow when I serve it, but we shall see
